Bijin Nabe, the restaurant name, also happens to be what their main hot pot dish is called. The hotpot consists of pure Jidori chicken which is a special type of free range chicken that is grown under strict quality standards. This type of chicken is tastier, meatier and richer in collagen compared to ordinary chicken. The bones are stewed for eight hours until it forms a rich, silky pudding like consistency that is served to you until it melts into a soup.
The pudding is made from pure Jidori chicken bones, salt and water. Collagen is a substance in our bodies that helps keep us young, firm and supple. Sadly, as we age, collagen production drops and we need ways to replenish it. Collagen is not only good for our skin and for helping us look youthful but it also strengthens our bones and muscles. Bijin Nabe offers a delicious way of doing so.

Aside from whole chicken parts, this hot pot has ground chicken that is made into chicken balls, assorted vegetables, tofu skin, prawns and mushrooms.
