Authentic Carbonara
Ingredients:
- 15-20 strips of bacon, fried and crumbled
- 5 cloves garlic minced and fried till golden brown
- 4-5 egg yolks
- 200 grams spaghetti noodles, cooked. (Save the pasta water.)
- salt and chili flakes to taste
- a generous amount of parmigiano reggiano or parmesan cheese
Procedure:
Set the fried bacon and garlic aside in separate bowls. Separate the eggs from the yolks. Cook pasta as package instructions suggest. The minute the pasta is cooked, drain and save water. Put an empty oven safe dish in a microwave and heat for 2 minutes. Pull it out when time is up and pour the pasta into the heated bowl, followed by the egg yolks, garlic, bacon, salt & chili flakes. You may add a little pasta water at a time just so there is balance between the thickness of the egg yolks and pasta. Add a generous serving of cheese and serve immediately as pasta is something that is best served right away. Any Italian mama would tell you that.
I kearned the same method from Chef Michael Smith years ago and never go back to the typical way of cooking carbonara eversince. I topped mine with sunny sideup fried egg.
