Happy Holidays everyone!  Sharing with you our fifteen year old tradition.  Christmas mornings have been for the five of us. My husband and three kids.  But through the years, we were sometimes joined by family and friends.  This year, my youngest brother in law joined us on our December 25, “hotel breakfast tradition”.  No matter how late we sleep the night before, we wake up the next day to open our gifts and then partake in our favourite meal of the day, breakfast!  We are a family that can have breakfast for lunch or dinner (not necessarily in the morning since we are not morning people).  Hotel breakfasts are also something we really enjoy, especially when we are out of the country.

My daughters and my latest fave spot out of the country, is breakfast at the veranda of the Peninsula, Hong Kong. At home, it’s still at the Manila, Peninsula!   We used to have a larger spread in past years, but, my children are all grown up and they insist I serve more of their requests rather than making too much of everything.  Fine by me, as I can’t really stand waste.  Here are some photos of this years spread.

carb station; bagels, rainbow bread, fluffy pancakes and pancake trimmings of m&m’s, jelly beans, pancake syrup and whipped cream. not in photo, chocolate syrup!

bacon, beef tapa, spada (dried philippine flat fish, fried to crunchy perfection), baked beans with molasses, brown sugar and bacon strips. not to be forgotten sinamak (spicy vinegar for the fish) and chopped native tomatoes in salt and pepper. fluffy scrambled eggs too!

our little dessert spread of japanese treats. also in the picture is a beautiful serving mantle from Japan, a gift to me from a cousin. and our very own philippine made marble candle holders. yes, i love beautiful things.

Bear in mind, it is not how wide your spread is but how meaningful you make the tradition.  It’s about making memories.
