Life as we know it is taking a complete turnaround and this generation will be the biggest recipients of gain or loss. Feast or famine. Progression or regression. Times are beckoning us to reflect, meditate and get creative about our future plans– as scary and uncertain as it seems. Thinking about it is daunting but at the same time exciting. With faith, prayer, hard work, dedication and special attention to new selfless advocacies, I know we can make our blessings abound.
I’ve been training myself with a new routine and more time for self-isolation (ironic right?) to think deeply so I don’t get stressed when fear creeps in. Waking up earlier, squeezing in some exercise after prayer, meditation and cooking dinner every single day. I am also deathly afraid of this unseen enemy so on market days, I wash everything that comes through our gate myself, leaving nothing to chance.
Pondering what on-line classes to join and new skills to learn. I love to decorate.
Glad my son has taken a liking to cooking and since I don’t allow take out these days, he hacked our favorite Jollibee tuna pie!

Fresh pesto from nature’s bounty
I often think of the verse in Psalm 112:7 that says “They will have no fear of bad news; their hearts are steadfast, trusting in the Lord.” It’s a time of change and while change may be hard, it is a constant. So this I am certain of; we will not be given anything we cannot handle. I have to continuously remind myself that what we are ALL going through now is for the best. Perhaps it is this generation that has abused mother nature’s gifts and the one where the abuse should end. Like a reset button, the reset starts with us. We prove ourselves now for a better tomorrow. A better you, a better me. And most of all, better humanity.

How did you cooked the okra?
I first blanch the okra for three mins. Then douse cold water over it to stop the cooking. In a separate pan, I sautè the garlic till light brown, add 3 tbsps. of light soy sauce (green kikkoman), 1-2 tbsps.of oyster sauce, some water so it wont be so salty, pepper and a little sesame oil. then i toss it with the okra. I do not like to cook vegetables for a long time so the vitamins are retained.
