Tuyo is a house favorite and easy to do. Usually requested after cocktails or late night hunger pangs of friends who visit.
Gourmet Tuyo Recipe
Ingredients
- Good quality bottled Tuyo in olive oil(I like Connie’s Kitchen)
- 5 tbsp. olive oil
- 5 cloves garlic (slivered)
- 1-2 tbsp. capers (I use the baby capers, the smaller the better)
- ½ cup vinegar (I use Datu Puti)
- 1 red finger chili (sili labuyo)
Procedure
- Sautè garlic till fragrant in olive oil over med high heat. Before garlic starts to turn brown, pour in the whole bottle of tuyo+oil
- Sauté for a minute then add capers, then add vinegar and chopped chili depending on your desired heat level.
- Allow to simmer for another minute.
- Serve warm over steaming hot rice (with an egg… or two… or not, it’s up to you!)
